Banana Bread Recipe

A simple and tasty banana bread recipe that the whole family will love



I can't stand waste and especially food waste. So when I see a bunch of bananas about to turn bad there is only one thing to do.

Make some delicious banana bread.

This is a super simple recipe that produces a great tasting family favourite that will fill a nice slot in my lunch box and make a great after school snack for the kids.

Banana Bread Ingredients



Ingredients

  1. 80g soft butter or margarine
  2. 115g caster sugar
  3. 1 egg
  4. 250g of plain flour
  5. 2 level teaspoons of baking powder
  6. 4 ripe bananas
  7. chocolate chips (optional)

Banana Bread Method



Method

  1. Preheat the oven to 180 degrees.
  2. Put the butter/margarine in a bowl with the sugar and beat together.
  3. Add the egg and continue to beat into a smooth paste. It looks a bit messy to begin with but quickly comes together.
  4. Add the flour and baking powder and mix to form a stiff dough that looks a lot like cookie dough.
  5. In another bowl mash the four ripe bananas. This is our favourite tool for this but you can also use a simple fork or potato masher.
  6. Add the mashed bananas to the dough and mix together to form a smooth batter and thick batter. It is ok if you still have some banana lumps.
  7. Throw in a couple of handfuls of chocolate chips (optional) and mix in.
  8. Grease a standard 23cm / 13cm loaf tin and place grease proof paper on the bottom and grease this as well.
  9. Poor the mixture into the tin and levelnout with the back of a metal spoon.
  10. Place in the centre of the oven for 55 minutes.
  11. You know it is done when it is well risen, golden brown in colour and springs back when pressed.
  12. Leave to cool in the tin for 15 minutes then loosen the edges with a knife and turn out onto a wire cooling rack to finish.

How to Eat Banana Bread



Once cooled your banana bread is ready to eat. Simply cut it into slices and serve on its own or with butter.

Alternatively, for a bit more of an indulgent taste serve it with peanut butter or chocolate spread with cream.

What can go wrong making Banana Bread



Bananas, thankfully, do not all come in uniform sizes so you may need to adjust the mixture with small amount of water if it looks too dry or tiny bit more flour of too wet. What you are looking for is a nice thick cake batter

Also, don't be tempted to take it out of the oven too soon. The outside may get a little dark but you need to give the inside plenty of time to cook otherwise you end up with a wet and stodgy bread.

Vegan Banana Bread
